JetBlue Previews New Mint® Menus From Michelin-Starred Crown Shy and Birdee

JetBlue is updating its award-winning Mint® experience once again and introducing the first onboard menus created by its newest culinary partners, Crown Shy and Birdee. These dishes bring two of New York City’s acclaimed dining destinations to the skies.

The new menus, developed in collaboration with Kent Hospitality Group, will debut July 31st on select domestic and transatlantic Mint® flights. Inspired by Crown Shy, the Michelin-starred Manhattan restaurant known for its contemporary American cuisine and Birdee, the popular Brooklyn bakery and all-day café celebrated for elevated comfort food and pastries, the menus reflect JetBlue’s hometown roots while continuing the airline’s focus on premium hospitality.

Morning travelers can enjoy breakfast selections curated by Birdee, including:

  • Strawberries & cream croissant
  • Mochi waffle with butter and maple syrup
  • Bacon, egg, and cheese sandwich on a Parker House roll with harissa aioli
  • Shakshuka with cherry pepper relish and feta

For lunch and dinner, Crown Shy introduces a menu featuring:

  • Warm Parker House roll with olive labne spread
  • Citrus-marinated chicken thigh with hot sauce vinaigrette
  • Pork katsu with hot cherry glaze and scallions
  • Razor clam chowder with roasted carrots and thyme
  • Sweet potato lasagnette with pecorino cream and chervil

Dessert offerings include a chocolate tart with sabayon and port wine syrup, strawberry olive oil shortcake with meringue and crème fraîche, and Birdee’s signature warm chocolate chip cookie.

JetBlue also continues to expand its onboard dining flexibility by clearly identifying vegetarian, gluten-free, dairy-free, and nut-free options, allowing customers to better tailor their meals to their dietary preferences.

The airline further announced that additional concepts from Kent Hospitality Group’s strategic partner, Four Clovers Hospitality Group, will join the Mint® menu rotation in early 2027. Future onboard offerings will feature dishes inspired by two more New York favorites: Red Hook Tavern, known for its acclaimed burgers and seasonal American fare, and Hometown Bar-B-Que, one of Brooklyn’s most celebrated barbecue destinations.
