Air France delivered a unique fine dining experience at cruising altitude on March 4th, when passengers traveling in Business Class on flight AF 422 from Paris Charles de Gaulle Airport (CDG) to Bogotá’s El Dorado International Airport (BOG) were treated to a special culinary event hosted by a renowned MICHELIN-starred chef.

As part of the airline’s Culinary Heights program, triple MICHELIN-starred chef Régis Marcon personally joined the flight to present and serve dishes from a menu he created exclusively for the occasion. During the flight, Marcon worked alongside the onboard crew and François Adamski, a Bocuse d’Or winner, Meilleur Ouvrier de France, and corporate chef at Servair (a global leader in airline catering). The chefs took part in the in-flight service and met directly with passengers to gather feedback on the dishes being served.

The exclusive menu showcased several refined creations, including small scallops with Jerusalem artichoke purée and hazelnut vinaigrette, roast guinea fowl with vinegar and caper sauce served with potatoes and diced vegetables, and beef with spiced sauce accompanied by fennel purée, carrots, and mushrooms. Another option included a crispy macaroni gratin with porcini mushrooms.
Régis Marcon currently serves as a signature chef for Air France’s Business class menu on long-haul flights departing Paris. Known for drawing inspiration from nature and the culinary traditions of France’s Auvergne-Rhône-Alpes region, Marcon focuses on creating refined dishes rooted in authentic ingredients and seasonal flavors. To deliver MICHELIN-level cuisine onboard, Air France works closely with Servair to prepare meals using fresh and locally sourced ingredients that change with the seasons. The airline emphasizes responsible sourcing practices, with meat, poultry, dairy products, and eggs used on its menus originating from France. Fish served onboard is sourced from sustainable fisheries or French suppliers. Vegetarian options are also consistently offered across all cabins.
As part of its sustainability efforts, Air France allows Business Class passengers to pre-select their main course up to 24 hours before departure. The system helps ensure passengers receive their preferred meal while also reducing food waste by allowing the airline to better manage onboard catering quantities.

Air France regularly partners with renowned chefs to design menus for its premium cabins, including La Première, Business, and Premium cabins on flights departing Paris and select international destinations.
