Malibu Barbie is coming to New York City and Chicago this summer with an immersive dining experience (including in my neighborhood – the West Loop. Mattel and Bucket Listers will launch these pop-up cafes in both cities this summer so that diners can feel like life-sized dolls.
Inspired by the Malibu Barbie doll, which made its debut in 1971, the Malibu Barbie Cafe will transport guests to the California beachside town filled with signature Barbie colors and groovy style.

Food choices will include Barbie-inspired fare like Pacific Paradise Pancakes, West Coast Wedge Salad, and a California Dreamin’ Club Sandwich. Cocktails will include the Think Pink Margarita, French “71,” and Beach Mojito.
Tickets are required for both cafes and start at $22-$30 for kids and $39-$49 for adults. Each ticket includes a 90-minute table reservation, an entrée, a side item, and full access to the cafe. Additional cocktails, shared plates, and desserts are available a la carte.
The pop-ups will be located at 19 Fulton Street, New York, NY 10038 in New York and 324 South Racine Avenue, Chicago, IL 60607. Opening dates are May 17th for New York and June 7th for Chicago. Both will be open until September 15th.
