The resort debuts with a culinary lineup led by Executive Chef Miguel Gomez. Costamar Beach Club delivers coastal California-inspired dining with ocean views, Mesa Madre offers Mexican comfort dishes, and Dátil Coffee Shop features pastries and specialty coffee. Silán, the resort’s signature Levantine restaurant, will open in spring 2026 with a menu shaped by North African, Middle Eastern, and Baja influences.

A 59,000-square-foot fitness and wellness center that includes a yoga studio, beachside lap pool, and 24-hour fitness facilities is a key element of the resort. Araya Spa (opening in early 2026) will offer a personalized menu of treatments designed around intention (including the signature 120-minute Sunrise Ritual). Adam Zilber, General Manager of Park Hyatt Cabo del Sol, said:

Being a part of the opening of the first Park Hyatt property in Mexico here in Cabo del Sol is an honorable moment for our team. In a destination celebrated for its natural beauty and cultural richness, we invite guests to slow down, be present, and feel truly taken care of as they experience Baja with meaning and intention—through architecture inspired by the desert and sea, cuisine rooted in local tradition, collaborations with local Mexican artisans and the modern elegance that defines the Park Hyatt experience.”

Anthony’s Take: Park Hyatt Cabo del Sol’s opening paves the way for continued brand expansion in Mexico. The Park Hyatt Mexico City and Park Hyatt Cancún are both slated to open in 2026.
