Alaska Airlines unveiled its latest First Class culinary offering today with the introduction of Chef’s (tray) Table. This concept will showcase West Coast chefs on board Alaska flights. It builds off of the partnership that Alaska launched last year with San Francisco’s Chef Brandon Jew.

Chef Jew is now part of the official Chef’s (tray) Table program. The next participant in this new program will be Chef Brady Ishiwata Williams. He’s won a James Beard award and helms Seattle’s renowned Tomo restaurant. Chef Brady’s restaurant, Tomo, is named in honor of his grandmother, Tomoko Ishiwata Bristol. Her cooking deeply influenced his culinary style. Chef Williams is self taught and he got his start at his grandparent’s diner before rising through the ranks to become executive sous chef at a Michelin-rated restaurant in Brooklyn and than as executive chef at Seattle’s Canlis where he earned a James Beard Award for Best Chef. He opened Tomo in 2021. It reflects his Japanese American heritage.

Chef Brady’s inaugural dishes will be available in First Class between Seattle-Tacoma International Airport (SEA) and New York John F Kennedy International Airport (JFK), Newark Liberty International Airport (EWR), and Ronald Reagan Washington National Airport (DCA). For breakfast, passengers will see Mochi Waffle & Fried Chicken. For dinner, guests can select the Klingemann Farms Glazed Short Rib. Preorders  for these dishes begin today and the exclusive menu launches on June 5th.

Todd Traynor-Corey, Vice President of Guest Experience at Alaska Airlines, said:

Chef Williams and Chef Jew work tirelessly at their craft and remain deeply rooted in their communities, no matter how successful they become. They embody Alaska’s values of giving back, creating thoughtfully curated meals with high-quality ingredients and providing memorable guest experiences — making this a perfect partnership.”

Anthony’s Take: Airplane food has been the butt of many jokes. The reality is that even First Class meals are generally just okay. It’s good to see Alaska bringing in chefs to up its game.
