DoubleTree by Hilton announced yesterday that it is rolling out a new dining concept across properties in the United States. The restaurants called “piebird” will feature classic American dishes along with seasonal pies. Sometimes a taste of home is what is really wanted when traveling and DoubleTree by Hilton looks to deliver with these new restaurants that were created by Hilton’s global, in-house consultancy known as StiR Creative Collective.
The first location is anticipated to open this fall at DoubleTree by Hilton Hotel Nanuet, in Nanuet. The DoubleTree by Hilton Hotel Asheville – Biltmore will debut in early 2026 and additional locations will follow.
You might not know this (and I only do from my time working at Good Housekeeping), but piebird takes its name from the ceramic figurines that are used to vent steam from covered pies as they bake. This helps to create a flaky crust and evenly cooked filling.
The menu will offer classic preparations will take modern twists. It’s inspired by American diners and will serve breakfast, lunch, and dinner. The day can be started with piebird Quiche and Monkey Bread French Toast. For lunch and dinner, the Knife and Fork Caesar, Tomato Jam Grilled Cheese, Chicken Pot Pie, as well as regional dishes like Biscuits and Gravy and the Southwest Cobb offer diners lots of delicious-sounding choices.

I have a huge sweet tooth and love that there will be freshly made pies on offer. The signature piebird Pie features a chocolate custard topped with chocolate malt balls. The Cookie Martini (it pays homage to the signature DoubleTree chocolate chip cookie) will be a featured item. piebird will also offer a signature cocktail called the piebird Palmer as well as other fun drinks like the Banana Daquiri and the Mandarin Mango Margarita.
Anthony’s Take: I love the concept of this restaurant and DoubleTree by Hilton had me at pie. I hope to get to check one of these out in the future.
