American Airlines is partnering with award-winning chefs to create new dishes for its Flagship® Lounges and Flagship® First Dining. Menus will vary based on the lounge location and it’s exciting to see some of my favorite chefs collaborating here.

The new dishes will focus on fresh, seasonal ingredients, globally inspired dishes, and offer restaurant-quality dining. This is great news for American flyers and another step the carrier is making to try to be seen as more premium. Here are the chefs and some of the dishes they will be partnering on:

ORD Dish

  • Chicago O’Hare International Airport (ORD): Sarah Gruenberg won a James Beard Award and is the chef/owner of Monteverde, which is just a few blocks away from my Chicago home and incredible. Gruenberg’s dish is Marinated Lentil Salad with Smoked Salmon.

DFW Dish

  • Dallas Fort Worth International Airport (DFW): Tiffany Derry is the owner of Roots Southern Table, Roots Chicken Shak, and Radici Wood Fired Grill. This spring, she is dishing up Coconut Chicken Curry.

LAX Dish

  • Los Angeles International Airport (LAX): Brandon Kida is the chef at Hinoki & the Bird and Go Go Bird. Kida will bring a unique Bao Bar where customers can enjoy a Crispy Maitake Mushroom Bao or a Fried Chicken Bao. Both sound delicious.

MIA Dish

  • Miami International Airport (MIA): Timon Balloo is the chef behind The Katherine in Fort Lauderdale. He will bring Dutch Baby Potatoes with Salsa Verde to the Flagship® lounge and Pink Shrimp Ceviche to customers visiting the Flagship® First Dining room.

JFK Dish

  • New York John F Kennedy International Airport (JFK): Ayesha Nurdjaja, the chef of Shuka and Shukette, will find her dish in the Chelsea and Soho joint premium lounges. She is making Shrimp Skewers with White Beans and Roasted Peppers.

Anthony’s Take: All of these dishes look and sound delicious. I’ve eaten in some of these restaurants and a chef collaboration is a nice touch for American to add to its most premium lounges.

American is wildly inconsistent about well… almost everything but it’s still nice to hear about this.
